Aromatic focaccia is a delicious Italian appetizer enriched with cooked ham, onion, sage, rosemary, thyme and pitted green olives. It has a soft and slightly crispy texture and an irresistible aroma. Perfect to enjoy on its own or served with cheeses and cured meats.
On a work surface, make a well with the flour and add the yeast you previously dissolved in 1 glass of lukewarm water
Immediately after, add the salt and about 3 tablespoons of olive oil
Work everything vigorously until a soft but elastic dough forms; let it rest covered with a cloth for 1 hour
Meanwhile, using a food processor, finely chop the cooked ham, slice the onion (peeled, rinsed and dried with kitchen paper) and finely chop all the herbs
Then incorporate the cooked ham and the herbs into the dough and work it a bit until everything is well combined
Next roll it out using a floured rolling pin and place it in an oiled baking pan, arranging and stretching it with your hands
Let it rise for another 30 minutes and finally garnish by sprinkling pitted green olives, a little coarse salt and olive oil; bake in a preheated oven for about 30 minutes, checking it occasionally
Tip: to make the focaccia crisper, try adding 1/2 teaspoon of sugar to the dough
