
Aromatic Focaccia
Aromatic focaccia is a delicious Italian appetizer enriched with cooked ham, onion, sage, rosemary, thyme, and pitted green olives. It has a soft and slightly crispy texture, and an irresistible aroma. Perfect to enjoy on its own or accompanied by cheeses and cured meats.

Preparation

On a work surface, arrange the flour in a mound and add the yeast that you have previously dissolved in 1 glass of warm water

Immediately add the salt and about 3 tablespoons of olive oil

Work everything vigorously until you form a soft and elastic dough that you will let rest covered with a cloth for 1 hour

In the meantime, using a kitchen mixer, finely chop the cooked ham, slice the onion (peeled, rinsed, and dried with paper towels), and mince all the herbs

Subsequently, incorporate the cooked ham and herbs into the obtained dough and work it for a while until everything is well blended

Then roll it out using a floured rolling pin and place it in an oiled baking tray, arranging and spreading it with your hands

Let it rise again for 30 minutes and finally garnish it by sprinkling pitted green olives, a bit of coarse salt, and olive oil, and bake in a preheated oven for about 30 minutes, checking the cooking from time to time

Tip: to make your focaccia crispy, try adding 1/2 teaspoon of sugar to the dough
