Preparation

Clean and slice the artichokes thinly
- STEP 2 OF 10
Soak them in water with lemon juice and leave them for fifteen minutes
- STEP 3 OF 10
In a pan, sauté the chopped onion in butter, then add the drained artichokes
- STEP 4 OF 10
Season with salt and pepper moderately, stir and cover
- STEP 5 OF 10
Cook for fifteen minutes
- STEP 6 OF 10
Crack the eggs into a bowl, add three tablespoons of grated cheese, the cream, a pinch of nutmeg, salt, and mix

Then add the artichokes

Butter four molds and pour the mixture into them
- STEP 9 OF 10
Cook in a bain-marie in a preheated oven at 180 degrees for about 30 minutes

Unmold and serve
