

Artichoke flans are a delicious side dish made with fresh artichokes, cream and grated cheese. They are perfect to serve alongside meat or fish dishes.











Clean and slice the artichokes thinly
Soak them in water acidified with the lemon and leave them for fifteen minutes
In a pan, sauté the chopped onion in the butter, then add the drained artichokes
Season with salt and pepper to taste, stir and cover
Cook for fifteen minutes
Crack the eggs into a bowl, add three tablespoons of grated cheese, the cream, a pinch of nutmeg, salt, and mix
Then add the artichokes
Butter four ramekins and pour in the mixture
Bake in a water bath in a preheated oven at 180 degrees Celsius for about 30 minutes
Unmold and serve
