Preparation

Take very tender artichokes and clean them by discarding the tough leaves generously
- STEP 2 OF 5
Cook them covered with oil and water, calculating one-third seed oil and two-thirds water

Salt, add a few peppercorns, a sprig of thyme, a bay leaf, and a few onion rings
- STEP 4 OF 5
During cooking (it will take about 40 minutes), the liquid should be absorbed, and the artichokes should remain almost dry

Serve them cold accompanied by black olives as an appetizer or hot as a side dish to a nice omelet
