Remove the tough leaves, stem, and thorns from the artichokes; spread them well and let them soak for a quarter of an hour in water with lemon juice

Place them upright in a pan, close to each other, also adding the clean stems cut into pieces, drizzle oil over each artichoke, and fill the pan with water, cooking until the liquid has evaporated.
