Wash the eggplants, prick them with a fork, cut them in half lengthwise and grill them on the barbecue
Place them under the oven grill until the skin puffs up and the flesh becomes tender
Peel them and press them to release the juices
Blend the flesh with garlic, tahin and lemon juice
Add the remaining ingredients and serve on hot crostini
