Ligurian Brandade of Salted Cod is a tasty main course typical of Liguria. It is made with salt cod, potatoes, white onion, parsley, garlic, Olive Taggiasche, lemon, country-style bread and extra virgin olive oil. The salt cod is boiled and then mashed together with the potatoes, forming a soft and flavorful cream. It is enriched with white onion, parsley and garlic for an even more intense taste. The Olive Taggiasche and lemon juice add freshness to the dish, while the toasted country-style bread provides a pleasant crunch. Finally, the extra virgin olive oil completes the dish, giving it a rich and authentic flavor.
Peel the potatoes and cut them into cubes
Boil the salt cod with the potatoes in a pot of water flavored with the onion without adding salt
Separately, chop the parsley with the garlic and the olives
Put the mixture in a bowl, add the lemon juice and the extra virgin olive oil
Toast the slice of bread in the oven for 2 minutes
Mash the salt cod with the potatoes in a clay pot, add the previously prepared chopped mixture and then brand (i.e., shake the pot vigorously) the pot with the salt cod
Serve with a slice of crusty bread
