Peel the celeriac; boil it al dente in salted boiling water; slice it
Sweat the thinly sliced onion in the oil
Combine it with the warm béchamel; add the Parmesan and 2 egg yolks
Brown the celeriac slices in oil, place them in a greased baking dish and cover them with the béchamel
Sprinkle with Parmesan and oil
Bake at 180°C
