

Oven baked potatoes with salmon are a delicious side dish that combines the softness of potatoes with the flavorful taste of salmon. A simple dish to prepare but with a stunning effect that will conquer all diners.
Wash the potatoes thoroughly to remove any dirt from the skin, dry them, cut them in half lengthwise, then scoop out the center to about one third of their height.
Reassemble the two halves, wrap each potato in a sheet of aluminum foil, place them on a baking tray in a preheated oven at 210 degrees, and bake for about 40 minutes.
Meanwhile, combine in the blender jar the cream, the juice of half a lemon strained through a sieve, the slice of smoked salmon, a pinch of salt, and a pinch of pepper.
Blend until you obtain a smooth and homogeneous cream.
When the potatoes are cooked, open them, fill them with the cream, and close them again.
Place them on a serving dish, sprinkle them with some chopped chives and salmon roe.
Serve them.
The contrast between the warm potato and the freshness of the cream is very pleasant, and this dish can also be served as a 'first course'.
