

Oven Ratatouille is a typical dish of French tradition, but also loved in Italy. It consists of a tasty and colorful preparation based on vegetables, which are sliced and then arranged in a tray and seasoned with aromatic herbs and tomato paste. Baking in the oven yields a flavorful and slightly crunchy dish. Perfect as a side dish or as a light main course.
Clean all the vegetables, divide the cauliflower into florets, and chop the others into small pieces.
In a large saucepan, heat the oil and sauté the chopped garlic and quartered onions for 5 minutes, without letting them color.
Add the peeled and seeded chopped tomatoes, wine, celery, carrots, salt, and pepper; stir and cook covered with moderate heat for about 20 minutes.
Add the remaining vegetables, tomato paste, and herbs; gently stir and continue cooking for another 10 minutes.
In a bowl, mix the flour with a pinch of salt and softened butter in pieces until you get a crumbly mixture, then add cheese and parsley.
Transfer the vegetables to a baking dish, sprinkle with the cheese mixture, and bake in the oven at 200 degrees for 35 minutes.
Serve hot.
