Let the batter rest for an hour in a cool place
Blend bananas with lemon juice, dried figs, and peach jam
Prepare the crepes with the batter and as they are ready, fill them with the banana cream
Roll them like a cigarette and keep them warm in a serving dish placed over a double boiler
Put orange juice, brown sugar, butter, and a pinch of nutmeg in a saucepan and reduce over moderate heat until you obtain a syrupy sauce, pour it over the crepes and serve
