Banana Crepes are a delicious French dessert, perfect for a sweet breakfast or snack. The thin crepes are filled with slices of banana and a sweet, creamy fresh cream filling. Once ready, they are served with a dusting of powdered sugar and a drizzle of maple syrup.
In a bowl combine the sifted flour, the sugar, a pinch of salt and the eggs, and beat while stirring.
Gradually pour in the milk and the cream, mixing continuously.
Let the batter rest in a cool place for one hour.
Blend the bananas with the lemon juice, the dried figs and the peach jam.
Cook the crepes with the batter and, as they are ready, fill them with the banana cream.
Roll them into a cigarette shape and keep them warm on a serving plate set over a bain-marie.
Put the orange juice, brown sugar, butter and a pinch of nutmeg in a small saucepan and reduce over moderate heat until you obtain a syrupy sauce; pour it over the crepes and serve.
