Sultanina raisins add a light sweetness, while Pernod adds a touch of liquor. Basilico Verde sauce can be stored in the refrigerator for a few days, making it perfect to prepare in advance for meals. Put the raisins, pine nuts, peeled garlic cloves, and basil into the food processor and chop everything up
Ideally, you should have a stone mortar because the food processor heats what it crushes and some aromas will be altered
Add the oil gradually as the mixture absorbs it
Continue until you have a soft and homogeneous mixture
Add the parmesan, salt, and pepper to taste
Mix very well and pour into a bowl, and add the Pernod, mixing gently
