
Basil Green Sauce

Sultana raisins add a light sweetness, while Pernod gives a touch of liquor. Basil green sauce can be stored in the refrigerator for a few days, making it perfect to prepare in advance for meals. Preparation

Place the raisins, pine nuts, peeled garlic cloves, and basil in the food processor and chop everything

Ideally, you should use a stone mortar because the food processor heats what it crushes, and certain aromas will be altered

Gradually add the oil, as much as the mixture can absorb

Continue until you have obtained a soft and homogeneous paste

Add the Parmesan cheese and salt and pepper to taste

Mix very well and pour into a bowl, then add the Pernod, stirring gently

IMPORTANT! Do not perform this operation in the food processor! As you may have realized, this is a variant of our pesto
