The sultana raisins add a light sweetness, while the Pernod gives a touch of liquor. Basil green sauce can be stored in the refrigerator for a few days, making it perfect to prepare in advance for meals. Put the raisins, pine nuts, peeled garlic cloves, and basil into the food processor and chop everything up
Ideally, you should use a stone mortar because the food processor heats what it grinds, which can alter certain aromas
Add the oil gradually, as much as the mixture can absorb
Continue until you have a soft and homogeneous paste
Add the Parmesan cheese and salt and pepper to taste
Mix very well and pour into a bowl, then add the Pernod, stirring gently
