    Preparation

      Put the raisins, pine nuts, peeled garlic cloves, and basil into the food processor and chop everything up

      Ideally, you should use a stone mortar because the food processor heats what it grinds, which can alter certain aromas

      Add the oil gradually, as much as the mixture can absorb

      Continue until you have obtained a soft and homogeneous paste

      Add the Parmesan cheese and salt and pepper to taste

      Mix very well and pour into a bowl, then add the Pernod, stirring gently

      IMPORTANT! Do not perform this operation in the food processor! As you may have guessed, this is a variation of our pesto
