Bavette allo Scoglio is a delicious first course of Italian origin. Prepared with Bavette pasta, squid, shrimp, mussels, clams, and a delightful tomato sauce enriched with white wine and brandy. A dish rich in sea flavors, perfect for a special dinner or to celebrate an important occasion.
Heat a few tablespoons of oil in a pan with 2 cloves of garlic, the chili pepper, and almost at the same time, the small squid; cook over high heat, stir well, pour in half of the wine, let it evaporate, then add the tomato and a little water, cover the pan and continue cooking over moderate heat.
In another small pan with a tablespoon of oil, 1/2 clove of chopped garlic, and a pinch of salt, add the mussels and clams, stir for a few moments, then remove from heat.
In the same saucepan, pour 3 tablespoons of oil, add the chopped carrot and onion, and let them brown.
