Using a fork, mash the onions, shallots, parsley, and pepper until finely chopped
Heat the oil in a pan, add the chopped aromatics, and then the beans
Stir until the beans are fully covered with the oil
Add the water and bacon and bring to a boil
Cover and cook for 2 hours or until the beans become tender
Pass everything through a blender
Season with salt and pepper
Serve the bean sauce alone or with white rice
