Beer batter is a light and crispy mixture used to fry various foods such as vegetables, fish, and chicken. The beer adds a flavor note to the batter and makes the fried foods even tastier. This recipe is simple to prepare and perfect for accompanying many dishes.

Sift the flour into a bowl, add the beer, eggs, and a pinch of salt, and mix until you achieve a homogeneous batter
Cover the bowl with a kitchen towel and let the batter rise for 15-20 minutes
After this time, mix once again energetically and then pass the mixture through a fine sieve to remove any flour lumps
Just before frying, fold in the whipped egg whites, ensuring they are not too stiff
Add the egg whites gradually so you can control the consistency of the batter: if it becomes too liquid, it will break apart while cooking
