Bianco Mangiare is a traditional dessert of Italian cuisine, particularly widespread in Sicily. It is a delicate and fragrant almond cream, enriched by the taste of cinnamon and lemon zest. It is a fresh and light dessert, perfect to conclude a meal in a refined way.
Peel the almonds and let them dry well. Grind them, place them in a white cloth and squeeze them out in water.
When the almonds are dry and have lost all their essence, prepare the cream as usual, adding the lemon zest and a cinnamon stick.
The ready cream is usually poured into the typical Sicilian molds previously moistened.
Once the Bianco Mangiare molds have set, they are served on plates with lemon leaves.
