Beat the eggs with half of the sugar
Gradually add the flour, a pinch of salt, half of the citrus juices and the milk
Mix thoroughly until you obtain a very smooth batter
Quickly caramelize the cleaned blueberries with the orange zest, the remaining citrus juice and the sugar
Blend half of them in a food processor and leave the rest whole
Heat a little butter in a crepe pan and make 8 small pancakes with the batter
Place the blueberry mousse in the center of each crepe, add some of the whole blueberries and fold into parcels
Set aside some of the sauce and some caramelized blueberries for decoration
Arrange the crepes two by two on dessert plates, decorate with the reserved blueberries, dust with powdered sugar and serve
