Bomboloni are typical sweets of the Italian tradition, similar to classic American donuts. They are soft and tasty, perfect to enjoy at breakfast, as a snack or as a dessert. Their round shape and soft texture make them irresistible for adults and children.

Mix 500 g of flour, 75 g of sugar, a pinch of salt, the lemon zest, the softened butter and a little lukewarm water
Incorporate the yeast dissolved in a little warm water and knead the dough until it is elastic
Cover it and let it rise in a sheltered place for 2 hours
Then roll it out on a floured work surface to a thickness of 1 cm and cut out discs (6 cm diameter), reworking the scraps
Let them rise again, covered with a cloth, for another hour, then fry them in plenty of hot oil at a steady temperature until they are puffed and golden
Serve them sprinkled with the remaining sugar
