Bomboloni are traditional Italian sweets, similar to classic American donuts. They are soft and tasty, perfect to enjoy for breakfast, a snack, or as a dessert. Their round shape and soft texture make them irresistible for both adults and children.
Knead 500 g of flour, 75 g of sugar, a pinch of salt, lemon zest, softened butter, and a little lukewarm water
Incorporate the yeast dissolved in a little warm water and work the dough until it is elastic
Cover it and let it rise in a sheltered place for 2 hours
Then roll it out on a floured board to a thickness of 1 cm and cut out discs (6 cm in diameter), re-kneading the scraps
Let them rise again covered with a cloth for another hour, then fry them in plenty of hot oil at a regular temperature until they are puffed and golden
Serve them sprinkled with the remaining sugar
