Bread and Spinach Gnocchi are a tasty and substantial first course, perfect for the colder months. Made with stale bread, spinach, eggs and grated Parmigiano, they are easy to make and irresistible.
Break the bread into pieces and put it in a bowl, cover it with the milk and let it soak well
Boil the spinach, squeeze it well, chop finely and add it to the milk-soaked bread together with the eggs and the flour needed to give the mixture the right consistency
When it seems to have reached the desired firmness, form the gnocchi and cook them as usual
The most suitable dressing is melted butter and plenty of Parmigiano
