Brittle is a typical dessert of the Italian tradition, very simple but extremely tasty. It is made with toasted almonds and caramelized sugar, which give it a crunchy texture and an irresistible flavor. Perfect to enjoy on its own or accompanied by a good coffee or a glass of liqueur.
Peel the almonds after blanching them in boiling water and chop them; then place them in a light oven to dry them well
Put the sugar on the heat and let it melt, stirring with a wooden spoon until it takes on a nice blonde color, the color of barley candies
At this point, add the almonds and stir so that they mix evenly with the sugar: then immediately pour them onto the work surface that you have previously greased
With a lemon, spread the brittle, trying to give it an even thickness: you can then cut it into diamonds or sticks
If you want to try making one of those brittle fruit bowls you see in pastry shop windows, decorated with caramelized or candied fruit, you will need to choose a bowl-shaped mold and grease it
After thinning the brittle on the still warm table, place it in the mold and try to fit it
You can remove it when it has completely cooled
