Bucatini with sardines is a typical dish of Sicilian cuisine, rich in intense flavors and tasty contrasts. Fresh sardines are boned and combined with ingredients such as wild fennel, saffron, Tropea red onion, sultana raisins, pine nuts, Bronte pistachios, sun-dried tomatoes and breadcrumbs. Soak the sultana raisins in hot water for 30 minutes
Shell the pistachios
Soak the sun-dried tomatoes in warm water
Quickly sear the sardines in a pan with oil and chopped Tropea red onion; add the blanched broccoli, the chopped sun-dried tomatoes and the remaining ingredients in any order you prefer
Drain the bucatini al dente and dress them with this sauce
Serve with breadcrumbs toasted in a pan with a little oil, wild fennel and chopped pistachios
