The Buche De Noel, also known as the Yule Log, is a French Christmas dessert shaped like a wooden log. It consists of a cocoa sponge cake filled and covered with chocolate buttercream. It is often decorated with marzipan leaves and meringue mushrooms to resemble a real log. This cake is perfect for Christmas parties and will surely make a beautiful impression on the table.
Prepare a sponge cake for rolled cakes and a buttercream following the instructions in the corresponding recipes, then incorporate the cocoa powder into the buttercream.
Spread half of the buttercream over the sponge cake, then roll it up.
Put the rest of the buttercream into a piping bag fitted with a star tip (no. 4) and on the surface of the log pipe many parallel ropes lengthwise so as to cover it completely.
Replace the star tip with a small plain tip and make a few decorations with the remaining buttercream.
Complete the garnish with marzipan leaves and meringue mushrooms or decorate the cake in another way according to your imagination.
--- The Yule Log is a traditional French Christmas dessert of which there are numerous versions.
The base of the cake is always the same, that is a 'log' of sponge cake filled with buttercream; what varies is the flavor of the filling, which can be chocolate, coffee or hazelnut, and the decoration, which leaves room for the cook's imagination.
We opted for marzipan leaves and meringue mushrooms.
