Savoy cabbage and bean minestrone is a tasty winter first course typical of Lombardy. Made with savoy cabbage, borlotti beans, potatoes and tomatoes, it is a nutritious and hearty dish. Perfect to enjoy on cold winter days.
Sauté the oil and garlic, add the peeled tomatoes with a little water, add the savoy cabbage and cook for 10 minutes.
Dice the potato and add it to the sauce.
Cook the beans and add them to the sauce.
Season with salt and cook for another 15 minutes.
Add hot water and when it boils pour in the pasta and cook until done.
