Preparation

    Butter and flour a 2-liter loaf pan

    Beat the egg whites of the 2 eggs until stiff with a pinch of salt

    Chop the chocolate into flakes and melt it in a bain-marie

    Peel the pears, remove the core, and cut them into cubes, then coat them with 3 tablespoons of flour

    With an electric mixer, beat the softened butter with the sugar until creamy and fluffy; add the 5 egg yolks one at a time, then the melted chocolate, 200 g of sifted flour, the stiff egg whites, and finally the floured pears

    Gently mix everything together, then pour it into the loaf pan and bake in the oven preheated to 180 degrees for about an hour: before removing from the oven, check the cooking with a wooden skewer by inserting it into the center of the cake; if it comes out dry, remove the 'loaf', turn it out onto a wire rack, and let it cool well before serving
