

Canestrelli are delicious cookies typical of Liguria, with a characteristic star shape. They are crunchy and crumbly, perfect to enjoy at any time of day. Their origin dates back to the Middle Ages, when they were prepared during religious festivals. Today they have become a symbol of Ligurian culinary tradition and are loved by young and old alike.
Arrange the flour in a well and place the chopped butter, the sugar and the egg yolk in the center (keeping the white aside)
Knead quickly
Roll out a dough about 1 cm thick then cut out the canestrelli with a fluted cutter or with flower-shaped cookie cutters
Brush them with egg white and place them on the baking sheet previously lined with parchment paper
Bake at 180°C until golden
When baked, sprinkle them with icing sugar
