Arrange the flour in a mound and place the chopped butter, sugar, and egg yolk in the center (keeping the white aside)
Knead quickly
Roll out a sheet about one cm thick, then cut out the canestrelli with a fluted pastry cutter or flower-shaped molds
Brush them with egg white and place them on a baking sheet previously covered with parchment paper
Bake them at 180 degrees and cook until they become golden
Once cooked, sprinkle them with powdered sugar
