Arrange the flour in a mound and place the chopped butter, sugar, and egg yolk in the center (keeping the white aside)
Knead quickly
Roll out a sheet about one cm thick, then cut out the canestrelli with a scalloped pastry cutter or flower-shaped molds
Brush them with egg white and place them on the oven tray previously covered with parchment paper
Bake them at 180 degrees and cook until they become golden
Once cooked, sprinkle them with powdered sugar
