Cut the pasta into squares and boil them
Sauté the onion in olive oil and butter, then add the minced meat and the sausage removed from its casing, the chopped mushrooms, and let cook for 5 minutes
Add the red wine and the peeled tomatoes, season with salt, and simmer until the sauce becomes thick
Place a tablespoon of this sauce on each pasta square and roll up
Coat a baking dish with some of the sauce and place the cannelloni in it; drizzle with melted butter and add a few slices of Fontina on top
Bake in the oven for 10 minutes or until the cheese has melted; finally serve with the remaining sauce on top
