Caramelized sugar is a simple yet very versatile preparation used to decorate and enhance cakes and desserts. Its crunchy texture and sweet, slightly bitter taste make it a perfect addition to many recipes.
Wet a small stainless steel saucepan with cold water, add the sugar, pour half a cup of hot water over it, and place it on the stove, letting it cook over very low heat until the sugar is completely dissolved, golden in color, and stringy like glass: this may take up to half an hour.
This sugar is used to caramelize pudding molds, particularly for the typical crème caramel.
It can also be poured over ice cream and is one of the main ingredients of burnt milk.
