Clean, wash and divide the cauliflower into florets
Boil them for 20 minutes in plenty of salted water
Drain them rather al dente and reshape them into a cauliflower shape on a serving plate that you'll keep warm
In a pan, fry the finely chopped garlic in the butter
Meanwhile, in a bowl, beat the eggs with a tablespoon of flour, add a tablespoon of vinegar, and season with salt and pepper
Pour the mixture into the butter pan, stir and immediately remove from heat
Continue to stir until you obtain a smooth cream
