
Cenci are a typical sweet from the Tuscan tradition. They are crispy, light fried pastries, similar to frappe or chiacchiere, enriched with grated lemon zest that gives them a fresh, fragrant aroma. Perfect for Carnival or a tasty snack, cenci are irresistible!


Make a well with the flour and put the other ingredients in the center; combine them with the flour to form a dough without overworking it
Let it rest for 30 minutes in a cool place
Roll the dough into a very thin sheet
Cut diamond shapes with a fluted pastry wheel; divide them into pieces about 10-15 cm long
Lightly fry them in olive oil or lard
Dust with powdered sugar
