
Chateaubriand sauce is a rich and flavorful sauce, ideal for accompanying roasted or boiled meats. Originating from France, this sauce is made with a base of demi-glace sauce enriched with dry white wine, shallot, tarragon, butter, lemon juice and cayenne pepper. The result is a condiment with an intense flavor and a delicate balance between sweetness, acidity and spiciness.

Place the shallot and the wine in a saucepan and reduce by two-thirds
Add the demi-glace sauce and reduce by half; strain through a cloth
Off the heat, add a pinch of cayenne pepper and a few drops of lemon juice; whisk in the softened butter
