

Stuffed tomatoes with cheese are a delicious and colorful side dish. This traditional Italian recipe uses large tomatoes, eggs, Parmesan cheese, garlic, parsley, breadcrumbs, salt, pepper, and extra virgin olive oil. The tomatoes are hollowed out and filled with a tasty mixture of eggs, cheese, and herbs, then baked until soft and golden. This dish is perfect to accompany grilled meats or fish.
Cut the tomatoes in half, remove the seeds and let the water inside drain.
Meanwhile, prepare the filling by mixing in a bowl the eggs with the Parmesan cheese, minced garlic and parsley, oil, salt and pepper, adding if necessary a bit of breadcrumbs to obtain a soft mixture.
Fill the tomatoes with the filling and place them in a baking dish, drizzle with oil and bake until the surface is well golden.
