














In the blender put: 25 cl of hot milk; 4 shot glasses of rum; the small leaves from one sprig of rosemary; the zest (the yellow part) of half an orange; 1 tablespoon of sugar and a pinch of salt
Blend very well until everything is broken down and homogeneous, then pour the resulting liquid into a small bowl in which 200 g of chestnut flour has already been placed
Stir with a fork and knead for a long time until everything is perfectly combined into a fairly thick batter (add a few more tablespoons of flour if necessary)
Then, with large spoonfuls, place 3–4 at a time of the mixture into a pan with a few tablespoons of olive oil or pork lard
Fry 4 minutes on one side and 3 on the other, then drain and let sit briefly on absorbent paper to remove excess oil; then arrange on a plate with the other two fritters (rice and apple), sprinkle with sugar and serve hot
