











In the blender, add: 25 cl of hot milk; 4 shots of rum; the leaves from a sprig of rosemary; the zest (the yellow) of half an orange; 1 tablespoon of sugar and a pinch of salt
Blend very well until everything is dissolved and homogenized, then pour the resulting liquid into a bowl where 200 g of chestnut flour has previously been placed
With a fork, stir and knead for a long time until everything is perfectly blended into a fairly consistent batter (add a few more tablespoons of flour if necessary)
Then, using large tablespoons, drop 3-4 pieces of the mixture at a time into some olive oil or lard
Fry for 4 minutes on one side and 3 on the other, then drain and let the excess fat drain on absorbent paper. Finally, combine in the plate with the other two fritters (rice and apple), dust with sugar and serve hot.
