- Large whole chestnuts

Preparation
- STEP 1 OF 6
Place the chestnuts in cold water with the fennel seeds and salt
- STEP 2 OF 6
Boil them for about 40 minutes and once cooked, peel them and pass them through a food mill
- STEP 3 OF 6
Put the obtained chestnut puree in a pot along with an equivalent amount of sugar, add the vanilla bean and 1 glass of water

Cook for about an hour on low heat, stirring constantly until the desired consistency is reached

Turn off the heat, remove the vanilla, and incorporate the cognac

Place the jam in jars and consume after 1 month
