Chicken calzones are delicious puff pastry parcels filled with boiled chicken, béchamel, cultivated mushrooms and grated cheese. They are a versatile and tasty dish, ideal for a quick lunch or a buffet. This recipe is inspired by Italian tradition but can be customized with various ingredients to taste.
Cook the mushrooms for 10 minutes with a little butter, salt and pepper and reserve the cooking liquid
Add the diced chicken to the mushrooms and sauté in the hot butter
Reduce the mushrooms' cooking liquid and mix it into the béchamel with the chicken, mushrooms and cheese
Cut discs from the puff pastry, fill them with the mixture, fold them over and bake in the oven at 180°C for 25 minutes
