Empty a chicken of approximately 900 g, cut off the head, neck, and legs, singe it, wash it, and dry it well
Salt it inside and out and place it in a baking dish
Surround it with 100 g of carrots and 60 g of turnips cut into sticks, 100 g of green beans, 100 g of shelled peas, 4 sliced spring onions, and 2 heads of lettuce cut into 4 parts
Salt, add a pinch of sugar and 30 g of butter in flakes
Cover everything with 1 disc of puff pastry and bake in a hot oven at 200 degrees for 10 minutes, cover with foil and place in the oven for another 25 minutes
