Empty 1 chicken weighing about 900 g, cut off the head, neck, and legs, singe it, wash it and dry it well
Salt it inside and out and arrange it on a baking dish
Surround it with 100 g of carrots and 60 g of turnips cut into sticks, 100 g of green beans, and 100 g of shelled peas, 4 sliced shallots and 2 heads of lettuce cut into 4 parts
Salt, add a pinch of sugar and 30 g of butter in small pieces
Cover everything with 1 sheet of puff pastry and bake in a preheated oven at 200 degrees for 10 minutes, cover with aluminum foil and bake for another 25 minutes
