Season the chicken pieces with salt and pepper
Melt the butter with the oil in a large skillet with a lid
Brown the chicken over medium heat on all sides
Once the chicken is slightly browned, move it to one side of the skillet where you will add finely chopped shallots (or onions) and sliced or quartered mushrooms
Sauté for about 5 minutes until golden, being careful not to burn the onions as they could make the meat bitter
Add finely chopped garlic and a pinch of sugar
Cook for 1 minute, stirring continuously
Check that during cooking the meat does not brown too much; to this end, keep turning the chicken
Add carrots and sprinkle the vegetables with flour
Pour in the broth to dissolve any lumps of flour
Stir the chicken pieces into the mixture and add thyme and bay leaves
Pour in the beer and cook everything over medium heat for about 30 minutes until the chicken is almost cooked through and still tender, stirring occasionally
Remove the lid and let it cook for another 10 minutes to reduce the sauce by about a third
Serve the chicken sprinkled with chopped parsley
