Break the eggs separating the egg whites from the yolks and place the yolks in a large bowl
Add the sugar and whisk vigorously until you obtain a frothy mixture (you can also use an electric whisk)
Once this first step is completed, place the cocoa in a saucepan on the turned-off burner and gradually dilute it with milk while continuously mixing; then turn on the heat
As soon as the milk boils, pour it over the yolk and sugar mixture while stirring continuously
Now strain the mixture into the saucepan where you boiled the milk and place it back on the fire at the lowest setting
Cook it until it thickens, coating the spoon; then pour it into a bowl and let it cool, stirring occasionally with a wooden spoon to prevent a film from forming on the surface
Finally, pour the now cold cream into the ice cream maker and place it in the freezer for the time needed to freeze it
You can serve the chocolate ice cream in individual cups after shaping it into spheres with the appropriate tool
