Break the eggs, separating the whites from the yolks, and place the yolks in a large bowl
Add the sugar and whisk vigorously until you obtain a frothy mixture (you can also use an electric whisk)
Once this first step is completed, put the cocoa in a saucepan on the unlit stove and gradually dilute it with the milk, stirring continuously; then turn on the heat
As soon as the milk boils, pour it over the yolk and sugar cream, stirring constantly
Now strain the mixture through a sieve, collecting it in the saucepan where you boiled the milk, and put it back on the stove on low heat
Cook it until it thickens and coats the spoon; then pour it into a bowl and let it cool, stirring occasionally with a wooden spoon to prevent a film from forming on the surface
Finally, pour the now cold cream into the ice cream maker and place it in the freezer for the time needed to freeze it
