Chocolate Pralines are delicious chocolate treats perfect for indulging at any time. These pralines are made with a combination of sweetened cocoa, dark chocolate, wafers, toasted hazelnuts, sugar, whole egg, melted butter, milk, and rum. They are easy and quick to prepare and can be stored for several days.
In a bowl, mix the wafers and chopped hazelnuts with a grinder
Add the raw egg (if desired, you can whip the egg white), the melted but cold butter, the sweetened cocoa, the sugar, the rum, and a bit of milk
Mix well
If the mixture is too dry, add a bit of milk
It should be a homogeneous mixture, moist but not too much
Form balls and roll them in dark chocolate (a fun variation: insert a hazelnut inside!)
Place the pralines in the freezer for a few hours
Before serving, let them thaw; they should remain soft but not cold (about 1 or 2 hours)
