The Christmas Turkey is a traditional dish much loved during the holiday season. This delicious dish is prepared with a 3000 g turkey stuffed with a flavorful mixture of turkey giblets, pancetta, sausage, breadcrumbs, apples, boiled chestnuts and pitted dried prunes. The turkey is then slowly roasted in the oven, enhancing all the flavors and making it tender and succulent. Serve the Christmas Turkey with roast potatoes and other seasonal vegetables for a complete festive meal.

Chop together the giblets, pancetta and sausage; add the soaked and squeezed breadcrumbs, peeled apples sliced, prunes softened in warm water, the chestnuts and stuff the turkey; add a knob of butter seasoned with salt and pepper
Sew the opening closed, wrap it with the pancetta slices and roast in the oven with a little butter at 220 degrees C for one hour, then at 180 degrees C for about another hour and a half
Occasionally baste the turkey with its juices
In the last quarter of an hour remove the pancetta and brown the skin
