Citrus meatballs are a delicious variation of classic meatballs. Made with veal pulp, fresh sausage, and flavored with orange juice and lemon zest, these meatballs are full of flavor and slightly citrusy. They are perfect for a tasty and original main course!
Soak the raisins in a small bowl filled with warm water, roughly chop the pine nuts, and remove the skin from the sausage by crumbling it with a fork.
Immediately after, in a non-stick pan, brown the veal meat with olive oil for a few minutes, then add the sausage and continue cooking for 5-6 minutes, stirring frequently.
Next, place the browned and drained meat in a bowl and add the eggs, 1 tablespoon of breadcrumbs, the pine nuts, the drained and dried raisins, and the zest of just 1 orange.
Mix all the ingredients well until you get a homogeneous mixture, and with the palm of your hands, form meatballs that you will roll several times in the breadcrumbs.
Finally, place them in a baking dish greased with olive oil and continue cooking for about 15 minutes, turning them occasionally.
Meanwhile, squeeze the oranges and heat the juice obtained in a small saucepan.
