Beat the egg yolks with the sugar and pour the boiled milk over them.
Add the softened and wrung gelatin; cook while stirring without boiling until the mixture coats the spoon.
Pass it through a sieve and let it cool.
Whip the cream and fold it into the mixture.
Pour into a mold moistened with cold water and keep in the fridge for a few hours.
Unmold and serve, garnishing as desired, for example with fresh fruit.
