100g100g - Dried grated coconut

Preparation
- STEP 1 OF 6
Bring the milk to a boil with the sugar and a pinch of salt, then add the rice, sultanas, and coconut

Cook over low heat, stirring until the milk is absorbed

Let it cool slightly and add the eggs

Pour onto an oiled work surface and level it into a square 3 cm high

Cut into diamond shapes, flour them, and fry in hot oil

Drain on absorbent paper and serve sprinkled with more coconut
