Put the sugar in a saucepan with the water and bring to a boil
Remove the syrup from the heat and stir in four cups of very strong coffee using a wooden spoon; let it cool completely
Pour the mixture into ice cube trays and keep it in the freezer for 2-3 hours, stirring every 30 minutes
Whip the cream until very stiff, adding the vanilla sugar (remember that for the operation to be successful, the cream must be very cold)
After the set time, distribute the granita into four glasses
Put the cream in a pastry bag with a star tip and decorate the surface of the granita as desired
