Coffee granita with whipped cream is a fresh and delicious Italian dessert ideal for cooling off during hot summer days. This granita is made with granulated sugar, water, ristretto coffee, whipping cream and vanilla sugar. Place the sugar in a saucepan with the water and bring to a boil
Remove the syrup from the heat and stir in four small cups of very strong espresso using a wooden spoon; let cool completely
Pour the mixture into ice cube trays and keep it in the freezer for 2-3 hours, stirring every 30 minutes
Whip the cream until very stiff, adding the vanilla sugar (remember that for this to work perfectly the cream must be very cold)
After the allotted time, divide the granita into four glasses
Put the whipped cream into a piping bag fitted with a star tip and decorate the surface of the granitas as desired
Serve immediately
