Put the sugar in a saucepan with the water and bring to a boil
Remove the syrup from the heat and incorporate four cups of very strong coffee, stirring with a wooden spoon; let it cool completely
Pour the mixture into ice trays and keep it in the freezer for 2-3 hours, stirring every 30 minutes
Whip the cream to a very stiff consistency, adding the vanilla sugar (remember that for the operation to be successful, the cream must be very cold)
After the set time, distribute the granita into four glasses
