The cold rice and chestnut dessert is a creamy, aromatic dessert, perfect for ending meals in a sweet and refined way. Soak the sultana raisins in warm water
Bring the milk to a boil, add 70 g of sugar, the drained raisins, the rice and cook over low heat
Separately cook the chestnuts, peel them, remove the skins, pass them through a sieve and add the remaining sugar, the cognac and the candied fruit
When the rice is cooked and the milk absorbed, let it cool and put it in a glass bowl
Cover it with the chestnut purée and let it cool
Garnish with the whipped cream and the candied cherries
