Beat the powdered sugar well with one whole egg and 4 egg yolks; add the finely grated lemon zest, the candied ginger and the flour
Mix well and work until you obtain a firm dough
Roll out the dough to a thickness of 1 cm and cut out the cookies with cookie cutters
Place them on a well-buttered baking tray and let them rest for one hour
Bake in the oven at 175 degrees Celsius for about 20 minutes
