

Cornettone is a delicious appetizer made of leavened dough filled with lard, pancetta, salami, cured ham and grated cheese. Originating from Italy, this dish is highly appreciated for its taste and simplicity. Perfect to enjoy during an aperitif or as finger food at a buffet.








Spread the flour and make a well in the center where you add water, salt, milk and yeast
Mix the flour from the outside toward the center until you create a soft, smooth dough
Continuously add flour on the work surface so that the dough does not stick
Let rest for at least 2 hours in a non-ventilated environment under a kitchen cloth
Roll out the dough with a rolling pin until you obtain a thin, square sheet
Grease it with lard and spread the pancetta, salami, prosciutto and cheese over it, all cut irregularly into slices or cubes, and dust it generously with Parmesan
Starting from one corner, roll the sheet until you form the cornettone
Place in a preheated oven at 200°C for 20 minutes
Serve in 2 cm slices
