To begin, wash the peppers thoroughly, dry them with paper towels and char them in the oven by placing them on the rack
Let them cool slightly, remove the skin, open them and remove the stem, seeds and the white ribs inside
Then cut them into pieces and puree them using a food processor
Meanwhile, wash the potatoes well and boil them in salted water with the skin on for about 20 minutes
Then let them cool slightly, peel them and pass them through a potato ricer
Drain the anchovy fillets and chop them finely; then separate the yolk from the white, place them in two different bowls and beat them
Prepare a container in which you will combine: the pepper purée, the mashed potatoes, the chopped anchovy fillets, the yolk and the salt
