

Croccantini are crunchy confections made from almonds, sugar and butter. They are perfect to enjoy as a snack or to give as a small indulgent gift. Their origin dates back to ancient Rome, where they were prepared as morsels of pure sweetness for the emperors.
In a heavy-bottomed small saucepan, gently melt the sugar with half a tablespoon of water; then add the chopped almonds, stir, add the butter and a little lemon juice; lower the heat and cook until the mixture turns golden.
Pour it hot onto a marble slab or an oiled plate and spread it to a thickness of one centimeter. With a knife, cut it into diamond shapes; let it cool and separate the pieces, placing them one by one on the bay leaves.
