
Diavola sauce is a spicy and flavorful sauce made from a combination of ingredients such as demi-glace sauce, dry white wine, red wine vinegar and spices. Put wine, vinegar, shallot, thyme, bay leaf and pepper in a saucepan; reduce by two-thirds over high heat
Add the demi-glace sauce and boil for a few seconds
Pass the sauce through a cloth and finish it with parsley, a little cayenne pepper and a couple of drops of Worcestershire sauce
At the end of cooking and off the heat, add the room-temperature butter
