- Demi-glace sauce
20Cl20Cl - Dry white wine
15Cl15Cl - Red wine vinegar
1Tablespoon1Tablespoon - Butter
30G30G - Chopped shallot
1Tablespoon1Tablespoon - Chopped parsley
1Tablespoon1Tablespoon - Thyme
1Leaf1Leaf - Bay leaf
1Piece1Piece - Worcester sauce
2Drops2Drops - Cayenne pepperto taste
- Black pepper crushed in mortarto taste
Preparation
- STEP 1 OF 5
Place wine, vinegar, shallot, thyme, bay leaf, and pepper in a pan; reduce by 2/3 over high heat

Add the demi-glace sauce and boil for a few seconds

Strain the sauce through a cloth and finish it with parsley, a little cayenne pepper, and a couple of drops of Worcester sauce

At the end of cooking and off the heat, add the butter at room temperature
