
Duck in Red Sauce

Preparation

Place a saucepan on the heat, ensuring the duck does not exceed 2/3 of its capacity, and bring it to the right temperature. Add the duck, browning it on both sides, then add the tomatoes with chopped parsley, a pinch of salt, white wine, and 2 ladles of water.

Cook for about 20 minutes over moderate heat, then add the previously blanched pearl onions and finish cooking for another 20 minutes.
