
Duck in red sauce is a traditional dish of Italian cuisine, particularly common in several regions of the North. It is a tasty and succulent main course in which the duck meat is slowly cooked in a flavorful tomato and white wine sauce. The result is a dish with an intense, enveloping flavor, perfect to enjoy on the occasion of a special lunch or dinner.



Place a pot on the heat large enough that the duck does not occupy more than two-thirds of its capacity and bring it to the correct temperature; add the duck and brown it on both sides. Add the tomatoes with the chopped parsley, a pinch of salt, the white wine and 2 ladles of water.
Cook for about 20 minutes over moderate heat, then add the previously blanched pearl onions and finish cooking for another 20 minutes.
