

Eggplant meatballs are a delicious vegetarian side dish that pairs well with main courses. The eggplants are cooked and then mixed with ground meat, onion, egg yolks, flour, breadcrumbs and seasonings. The meatballs are then fried until crispy and served with fresh lemon juice. They are a tasty and creative way to enjoy eggplants!
Add the chopped eggplants, the onion and the egg yolks to the meat; salt and pepper, and form a homogeneous mixture.
With floured hands form balls, dip them in the beaten egg and then in the breadcrumbs.
Fry them in hot oil, drain and serve with lemon halves.
